They need to be disassembled and reassembled regularly, which means that they're supposed to come apart easily, and from all the wearing down from being torn apart and put back together generally just causes them to be far more dangerous than more permanent installments. However, carnival rides are a whole different story altogether. Most severe harm dealt by rides is to those with pre-existing conditions, so as long as you don't have one, you're fine. You're more likely to get hurt on the drive over than in the park itself, no matter what rides you do. Almost every major accident has been due to human error trying to override the system, and again, typically employees are trained enough so that such happenings are extraordinarily rare.

The likelihood of major accidents is super low - the park itself has a reputation to protect, and the rides themselves typically do most of the safety work through just their systems. I can assure you that established theme parks tend to be super safe (though, I can definitely understand your concerns if it's a Six Flags).
